Pancakes and fishballs of nunnata recipe

Also known as "new born sardines": they have the flavor of the sea.

In Sicilian dialect nunnata means new born sardines. Sicilian people say that new born sardines: hannu ‘u sapuri ru mari, litteraly they have the flavor of the sea.

Let's see two nice recipes based on those new born sardines: the pancakes of nunnata and the fishballs of nunnata. Let's go!

Ingredients for the pancakes of nunnata

  • 1 kg of new born sardines;
  • 400 grams of flour;
  • 1 clove of garlic;
  • 1 little bunch of parsley;
  • salt and pepper.

Preparation of the pancakes of nunnata

After cleaning the sardines, mix them in a dish with the chopped parsley, add the crushed clove garlic, salt and a little pepper (if you wish); add 5 drops of lemon juice and the flour and mix everything.

Prepare the pancakes with a table spoon with the mixture, poor them in a pan with hot oil and fry.

Flip them: they have to become golden on both sides, then put them to drain on some paper towels.

Serve hot.

Ingredients for the fishballs of nunnata

  • 1 kg new born sardines;
  • 3 eggs;
  • 2 cloves of garlic;
  • 1 little bunch of parsley;
  • salt and pepper.

Preparation of the fishballs of nunnata

Once cleaned the sardines, mix them with the eggs, the chopped parsley, the crushed garlic, salt and little pepper. Prepare the balls from the mixture with a tablespoon. pour them in a pan with hot oil and fry.

As for the pancakes, flip them in order to make them golden on both sides, then put them to drain on some paper towels.

Serve hot.
