An extremely easy eggplant recipe
It's another easy way to cook eggplant without frying.
This is a really simple recipe with eggplant. It is ready in 15/20 minutes and you can eat it with cheese.
Ingredients for the simple eggplant recipe
- 2 eggplant
- 1 clove of garlic
- 3 tablespoonfuls of extra virgin olive oil
- salt
- 1/2 glass of still white wine
- 1 glass of vegetable broth.
Preparation of the simple eggplant recipe
- Wash the eggplant
- Peel the eggplant
- Cut the eggplant into cubes
- In a pan put a clove of garlic with 3 tablespoonfuls of extra virgin olive oil
- Add the cubes of eggplant
- Add salt, white wine, vegetable broth, put a lid on the pan and let it cook for about 15/20 minutes at low heat
- The eggplant is ready: now you can serve it with the cheese you like!
