This is a tasty green salad with scarola lettuce from Rome.
Scarola is a kind of lettuce with large and long tender leaves. This is a preparation of the traditional and popular Roman cuisine and once again it is an example of how poor and simple food can be turned into a very appetizing dish.
Carefully wash the salad leaves and chop them in two parts. In a large pan put the extra virgin olive oil, the clove of garlic, the anchovies the black olives.
Heat it up, splash the white wine and stir with the fork until the anchovies have melted down.
Remove the garlic and add the scarola. Give a mix, put the lid on, set the fire at medium temperature and let it cook for a few minutes.
Add the pine nuts previously toasted and serve the salad on bread croutons.
