Ingredients for Vegetable Purses recipe, 4 people

Phyllo dough

  • ⅔ cups of warm water
  • ½ teaspoon of salt
  • Chives (to tie – optional)
  • 2 tablespoons of olive oil
  • 2 cups of flour

Filling

  • 2 tablespoons of olive oil
  • 1 large organic zucchini squash, quartered
  • ½ cup of light crumbled feta cheese
  • Salt and pepper as needed
  • ½ cup of artichoke hearts, chopped
  • 1 red bell pepper, chopped
  • 1 cup of cubed butternut squash

Red pepper sauce

  • 1 teaspoon of basalmic vinegar
  • ½ red bell pepper
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
