  • 2 fresh red peppers, roasted and sliced into strips (or jarred roasted red pepper strips)
  • sea salt
  • 1/2 teaspoon of ground paprika
  • 5- oz baby spinach (1 standard clamshell package)
  • 6 ounces of crumbled feta cheese
  • parmesan, for serving
  • 2 cups of cooked or canned chickpeas
  • 1 pound of pasta, prepared according to package directions
  • 4 heads broccoli, washed
  • 4 tablespoons of olive oil, divided
  • 1/2 teaspoon of ground cumin
