Ingredients for Cod Fish Cakes recipe, 14 people

    For the fish cakes

    • 1 ½ pounds of rehydrated salted cod (or fresh cod)
    • 1 gallon of milk (if using salted cod)
    • Few shakes Tabasco
    • Salt as desired (if using fresh cod)
    • 2 eggs
    • 2 tablespoons of minced fresh parsley
    • 4 tablespoons of unsalted butter
    • 1 cup of diced sweet onion such as vadalia
    • ½ cup of potato flakes (dry mashed potato mix)
    • ½ cup of diced celery
    • 1 pound of russet potato peeled
    • 1 tablespoon of extra virgin olive oil
    • ¼ teaspoon of freshly ground black pepper
    • 2 garlic cloves minced
    • 1 cup of heavy cream

    For the breading and frying

    • 2 cups of corn flour (if you can’t find corn flour, substitute fish fry mix, which is seasoned corn flour or use regular flour if neither are available)
    • 1/3 cup of milk
    • 2 cups of bread crumbs
    • Vegetable oil for frying
    • 3 eggs
    • Lemon for garnish
