Meyer Lemon or Orange Swirled Vanilla Bean Cheesecakes recipe

Ingredients for Meyer Lemon or Orange Swirled Vanilla Bean Cheesecakes recipe, 10 people
Citrus Curd
- Zest of 2 lemons or 1 large orange
- 1/2 cup of fresh Meyer lemon juice, orange juice or other citrus juice
- Pinch of salt
- 1/2 cup of sugar
- 1/4 cup (2 ounces.) unsalted butter, cut into small cubes
- 2 large eggs
Crust
- 1/3 cup of sugar
- 6 to 8 tablespoons. of butter
- 1/8 teaspoon of salt
- 2 to 3 cups of finely ground graham crackers
Cheesecake
- 5 (8 ounces.) packages cream cheese, room temp
- 2 tablespoons of flour
- 2 vanilla beans, split lengthwise and seeds scraped (or 2 teaspoons of vanilla extract)
- 2 egg yolks, room temp
- 5 eggs, room temp
- 1 3/4 cups of sugar
- 1/4 cup of heavy cream, room temp
