The first thing that we must do is clean the sardines well, remove the head, the insides, and the vertebrae. We must then wash the sardines removing any excess blood as well as any scales that may remain. We will also cut off any of the impurities and place the sardines in a strainer, drying them afterwards.
These sardines will then be placed in a container and we will cover them with vinegar and a pinch of salt and then store in a refrigerator.
To serve, dice the garlic and parsley and mix with olive oil. Place this on top of the sardines and serve.
