Ah, the old and sweet quince...
The quince is a very ancient fruit, older than the apple, which requires a wide-ranging climate to flower properly. Let's see how to make a delicious jam with that fruit!
The quince jam is an easy process, but requires a lot of patience: 30 minutes to cook the fruit, and 30 minutes to cook the jam. You will need a wooden spoon, a pot, four sterilized glass jars of 500 grams, a vegetable mill and a fork. Let's go!
Wash the quinces, put them in the pot as they are (with the peel), and boil them for 30 minutes. Once they are a little cooler, peel and cut them into small pieces.
Pass everything through the vegetable mill to reduce them to a cream: there should be no lumps. Wash the original pot and pour everything in it, together with the sugar, the lemon juice, the water and the aroma of vanilla. Boil and stir continuously.
Once reached a satisfactory density and 30 minutes has passed, put the jam into sterilized jars, close the lid and boil the jars in a bain-marie for 30 minutes, possibly "upside down".
Then leave the jars to cool in a cool and dark place. Now be patient: after 48 hours your quince jam will be ready!
