In Italian imagination, lentils bring money!
Every December 31st in several Italian kitchens you can find a pot of lentils cooking, because these legumes are a must on our tables in the last day of the year! We eat them with joy waiting for the money to come, even if we know that it rarely will knock on our doors, for free.
Nevertheless we don’t worry because lentils themselves carry a treasure inside, the proteins that make dishes nourishing!
This recipe is very simple and it takes only a couple of minutes to be ready because we use canned lentils.
In a pan, put two spoonful of extra virgin olive oil together with the minced leek, carrot and celery.
Fry them over low heat (in Italy we say soffriggere) for 3 minutes and then add the canned lentils with its water.
Cook over low heat till the water will evaporate, add salt and pepper at your taste and serve.
